  • 1 lb boneless chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons Thai green curry paste
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup sliced mushrooms
  • 1 cup snap peas
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.

  2. Add the Thai green curry paste and cook for another minute, stirring constantly.

  3. Add the sliced chicken breast and cook until browned on all sides.

  4. Pour in the chicken broth and coconut milk. Bring to a simmer and let cook for 10 minutes.

  5. Stir in the fish sauce, lime juice, sliced mushrooms, and snap peas. Cook for an additional 5 minutes until the vegetables are tender.

  6. Ladle the soup into bowls and garnish with fresh cilantro leaves. Serve with lime wedges on the side.
