Serves:
Ingredients
- 1 whole chicken, cut into pieces
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 4 cloves of garlic, minced
- 8 cups chicken broth
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 large eggs, beaten
- Fresh parsley, for garnish
Instructions
-
In a large pot, bring the chicken broth to a boil. Add the chicken pieces, carrots, celery, onion, and garlic.
-
Reduce the heat to low and simmer for 1 hour, or until the chicken is tender and cooked through.
-
Meanwhile, in a mixing bowl, combine the flour and salt. Make a well in the center and add the beaten eggs. Mix until a dough forms.
-
On a lightly floured surface, roll out the dough to 1/8 inch thickness. Cut the dough into thin strips or desired noodle shapes.
-
Remove the cooked chicken from the pot and shred or chop into bite-sized pieces.
-
Return the chicken to the pot and add the homemade noodles. Cook for another 10-12 minutes, until the noodles are cooked through.
-
Serve the Old-Fashioned Chicken and Noodles hot, garnished with fresh parsley.
