Total: 1 hour 50 minutes

Serves:

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 8 cups chicken broth
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs, beaten
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken pieces, carrots, celery, onion, and garlic.

  2. Reduce the heat to low and simmer for 1 hour, or until the chicken is tender and cooked through.

  3. Meanwhile, in a mixing bowl, combine the flour and salt. Make a well in the center and add the beaten eggs. Mix until a dough forms.

  4. On a lightly floured surface, roll out the dough to 1/8 inch thickness. Cut the dough into thin strips or desired noodle shapes.

  5. Remove the cooked chicken from the pot and shred or chop into bite-sized pieces.

  6. Return the chicken to the pot and add the homemade noodles. Cook for another 10-12 minutes, until the noodles are cooked through.

  7. Serve the Old-Fashioned Chicken and Noodles hot, garnished with fresh parsley.
