Noodles & Co. Style Tomato Basil Bisque Recipe

This refreshingly smooth tomato basil bisque is inspired by the tastes of Noodles & Company. Serve it with a side of crusty bread for an even better meal!

How To Make Noodles & Co. Style Tomato Basil Bisque

  • 28 oz tin crushed tomatoes
  • 3 cups vegetable stock
  • 3 twigs basil leaves (chopped)
  • 1 cup red onion (chopped)
  • 3 cloves garlic (minced)
  • 2 medium carrots (small dice)
  • 1 bay leaf
  • ½ tsp red chili flakes
  • 2 tsp Italian Seasoning
  • ¼ cup white wine
  • 1 tbsp tomato paste
  • Salt & ground black pepper (to taste)
  • 3 tbsp olive oil
  • Saltine crackers or crusty toasts (to serve)
  1. In a large pot, saute the chopped onion, carrots, and garlic in oil until translucent.
  2. Add in the bay leaf, Italian Seasoning, tomato paste, and red chili flakes. Saute briefly.

  3. Deglaze with white wine & reduce briefly.
  4. Add the basil, crushed tomato, & vegetable stock. Cover and simmer for 30 minutes.
  5. Remove & discard the bay leaf, transfer the pot's contents to a blender and pulse until pureed. You may also use a stick blender if prefered.

  6. Season to taste with salt & pepper. Adjust accordingly.

  7. Serve together with either saltine crackers or crusty bread.
