Ingredients

  • 4 haddock fillets
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1/4 cup chopped fresh basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until softened.

  3. Stir in the diced tomatoes, tomato paste, chopped basil, salt, and black pepper. Simmer for 5 minutes, then remove from heat.

  4. Place the haddock fillets in a baking dish, and pour the tomato basil sauce over them.

  5. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.

  6. Serve the haddock in tomato basil sauce with your choice of side dishes.
