A meatless twist on the classic sandwich. These Sloppy Joes are made in a crockpot, perfect for busy weeknights.

Total: 4 hours 10 minutes on low or 2 hours 10 minutes on high

Serves:

Ingredients

  • 1 can (15 oz) of lentils, drained and rinsed
  • 1 can (15 oz) of diced tomatoes
  • 1 red onion, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 hamburger buns

Instructions

  1. In a crockpot, combine lentils, tomatoes, onion, green pepper, garlic, tomato paste, brown sugar, apple cider vinegar, Worcestershire sauce, salt, and pepper.

  2. Cover and cook on low for 4 hours or on high for 2 hours.

  3. Serve on hamburger buns.
