Ingredients

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 4 buns, for serving

Instructions

  1. In a slow cooker, combine kidney beans, diced tomatoes with green chilies, frozen corn, onion, and bell pepper.

  2. In a small bowl, whisk together ketchup, tomato paste, apple cider vinegar, brown sugar, garlic powder, chili powder, cumin, salt, and pepper. Pour over the bean mixture in the slow cooker.

  3. Stir everything together, cover, and cook on low for 4-5 hours, or until vegetables are tender and flavors are blended.

  4. Spoon the mixture onto buns and serve hot.
