How To Make Crockpot Vegetarian Stew Recipe

A hearty and flavorful vegetarian stew cooked in a slow cooker. Perfect for cold winter evenings.

Serves:

Ingredients

  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 2 large carrots, sliced
  • 2 stalks of celery, sliced
  • 1 cup of button mushrooms, sliced
  • 1 can of diced tomatoes (14.5 oz)
  • 1 can of kidney beans, drained and rinsed (15 oz)
  • 1 can of garbanzo beans, drained and rinsed (15 oz)
  • 1/2 cup of dry quinoa
  • 4 cups of vegetable broth
  • 1 bay leaf
  • 1 tsp of dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a crockpot, combine all ingredients except for the quinoa and parsley.

  2. Cook on high for 5-6 hours or low for 8-10 hours.

  3. During the last hour of cooking, add the quinoa and stir well.

  4. Discard the bay leaf and adjust the seasoning with salt and pepper.

  5. Garnish with chopped parsley, if desired, and serve hot.
