Breakfast bowls are really convenient because all you have to do is literally toss together the ingredients in a bowl, and you’ve got yourself a hearty breakfast. You might have already seen the trendy bowls of quinoa seeds with fruits and nuts around social media. But did you know that you can have savory renditions of this morning meal, too? Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 2 cups cooked brown rice
  • 2 ripe mangoes, diced
  • 1 red bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1 avocado, sliced
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat grill or grill pan over medium-high heat.

  2. Rub chicken breasts with jerk seasoning and drizzle with olive oil.

  3. Grill chicken for 6-8 minutes per side, or until cooked through.

  4. Remove chicken from grill and let it rest for a few minutes before slicing.

  5. Divide cooked brown rice among 4 bowls.

  6. Top rice with sliced jerk chicken, diced mango, sliced red bell pepper, red onion, and avocado.

  7. Drizzle lime juice over the bowl and garnish with fresh cilantro.

  8. Serve immediately and enjoy!
