Ingredients
- 4 large sweet potatoes
- 4 slices of bacon, cooked and crumbled
- 1/2 cup blue cheese, crumbled
- 1/4 cup pecans, chopped
- 1/4 cup dried cranberries
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Scrub the sweet potatoes and pat dry. Pierce the potatoes all over with a fork.

Place the potatoes directly on the oven rack and bake for 45 minutes, or until tender.

Remove the potatoes from the oven and let cool for a few minutes.

Cut a slit lengthwise in each potato and gently press the ends to open up.

Season each potato with salt and pepper, to taste.

Divide the crumbled bacon, blue cheese, pecans, and dried cranberries evenly among the potatoes, stuffing them into the slits.

Return the stuffed potatoes to the oven for 5-10 minutes, until the cheese has melted and the toppings are heated through.
