Serves:
Ingredients
- 1 lb ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1 cup frozen peas and carrots
- 1/4 cup chopped fresh cilantro
- 1 package refrigerated pie crusts
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a large skillet, cook the ground turkey over medium heat until no longer pink. Drain any excess fat.
-
Add the chopped onion and minced garlic to the skillet and cook until onion is softened.
-
Stir in cumin, coriander, cinnamon, ginger, and cayenne pepper. Cook for 1-2 minutes until spices are fragrant.
-
Add frozen peas and carrots, and cook until heated through. Remove from heat and stir in fresh cilantro. Season with salt and pepper to taste.
-
Line a 9-inch pie dish with one of the pie crusts. Spoon the turkey filling into the crust-lined dish.
-
Cover with the second pie crust and seal the edges. Cut a few slits on top for steam to escape.
-
Brush the top crust with beaten egg wash.
-
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is hot and bubbly.
-
Allow the pie to cool for a few minutes before serving. Enjoy!
