How To Make Root Vegetable Rice

Ingredients
- 1 cup of basmati rice
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 parsnips, peeled and diced
- 1 turnip, peeled and diced
- 2 garlic cloves, minced
- 1 teaspoon of thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent.

Add the minced garlic, diced carrots, parsnips, and turnip to the pot. Cook for about 5 minutes, stirring occasionally.

Add the basmati rice to the pot and stir to combine with the vegetables.

Pour in the vegetable broth and season with thyme, salt, and pepper. Bring to a boil.

Reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the vegetables are tender.

Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.

Serve the root vegetable rice garnished with fresh parsley.
