Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp fennel seeds
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and diced
- 4-5 tbsp ice water
- 2 tbsp olive oil
- 4 shallots, thinly sliced
- 1 cup grated cheddar cheese
- 2 eggs, beaten
- Salt and pepper, to taste
Instructions

In a food processor, combine the flour, fennel seeds, and salt. Add the butter and pulse until the mixture resembles coarse crumbs.

Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.

Transfer the dough onto a lightly floured surface and shape it into a disc. Wrap it in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 400°F (200°C).

In a skillet, heat the olive oil over medium heat. Add the sliced shallots and cook until caramelized, about 10 minutes. Remove from heat and let cool.

Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess.

Spread the caramelized shallots evenly over the bottom of the pie crust. Sprinkle the grated cheddar cheese on top.

In a small bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the cheese and shallots.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is set.
