Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tbsp tamarind pulp
  • 2 cups cherry tomatoes
  • 1 cup spinach, chopped
  • 1 tsp honey
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the diced onion and sauté until translucent.

  2. Add the minced garlic and grated ginger to the pan. Sauté for another minute until fragrant.

  3. In a small bowl, mix the tamarind pulp with 1/4 cup of water. Pour the tamarind mixture into the pan and stir well.

  4. Add the cherry tomatoes to the pan and cook until they start to burst, about 5 minutes.

  5. Add the chopped spinach to the pan and cook until wilted, about 2 minutes.

  6. Stir in the honey and season with salt and pepper to taste.

  7. Serve the sticky tamarind tomato & spinach whirl with rice or naan bread.
