How To Make Pork & Aubergine Noodle Stir-Fry

Ingredients
- 8 oz pork tenderloin, thinly sliced
- 1 aubergine, cut into 1-inch cubes
- 8 oz noodles (such as udon or soba)
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 tbsp vegetable oil
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions

Cook the noodles according to package instructions and set aside.

In a large pan or wok, heat the vegetable oil over medium-high heat.

Add the pork slices and cook until browned and cooked through. Remove from pan and set aside.

In the same pan, add the aubergine and cook until slightly softened, about 5 minutes.

Add the garlic and ginger, and cook for another minute until fragrant.

In a small bowl, whisk together the soy sauce, oyster sauce, and hoisin sauce.

Return the pork to the pan, along with the cooked noodles and sauce mixture. Stir to combine and heat through.

Garnish with sliced green onions and sesame seeds before serving.
