How To Make Warm New Potato Salad with Bacon & Blue Cheese

Ingredients
- 1 lb new potatoes, halved
- 4 slices of bacon, cooked and crumbled
- 1/4 cup blue cheese, crumbled
- 2 green onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
Instructions

Place the halved potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the potatoes and cook until golden brown and crispy, about 8-10 minutes.

In a small bowl, whisk together the white wine vinegar, salt, and pepper. Drizzle over the cooked potatoes and toss to coat.

Transfer the potatoes to a serving dish and top with crumbled bacon, blue cheese, and sliced green onions.
