Ingredients

  • 1 lb new potatoes, halved
  • 4 slices of bacon, cooked and crumbled
  • 1/4 cup blue cheese, crumbled
  • 2 green onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Instructions

  1. Place the halved potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the potatoes and cook until golden brown and crispy, about 8-10 minutes.

  3. In a small bowl, whisk together the white wine vinegar, salt, and pepper. Drizzle over the cooked potatoes and toss to coat.

  4. Transfer the potatoes to a serving dish and top with crumbled bacon, blue cheese, and sliced green onions.

  5. Serve warm and enjoy!
