Ingredients

  • 4 cod fillets (about 6-8 ounces each)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the cod fillets with salt and pepper on both sides.

  2. Heat the olive oil in a large skillet over medium-high heat. Add the cod fillets and sear for 3-4 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the diced onion, minced garlic, diced carrots, and diced celery. Cook for 5-7 minutes until the vegetables are tender.

  4. Pour in the fish or vegetable broth and bring to a simmer. Cook for 10 minutes to allow the flavors to meld together.

  5. Stir in the heavy cream and dried thyme. Season with salt and pepper to taste. Continue to simmer for another 5 minutes.

  6. Place the seared cod fillets back into the skillet with the chowder sauce. Gently simmer for 2-3 minutes to heat the fish through.

  7. Serve the seared cod with chowder sauce in individual bowls, garnished with fresh parsley.
