Serves:

Ingredients

  • 8 lamb cutlets
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 bunch of Swiss chard, stems removed and leaves chopped
  • 1 bunch of kale, stems removed and leaves chopped
  • 1/2 cup of chicken broth
  • Juice of 1 lemon
  • Red pepper flakes, to taste

Instructions

  1. Season the lamb cutlets with minced garlic, salt, and pepper. Let them marinate for at least 10 minutes.

  2. Heat olive oil in a large skillet over medium-high heat. Cook the lamb cutlets for 3-4 minutes per side or until cooked to your desired doneness. Remove from the skillet and set aside to rest.

  3. In the same skillet, add the Swiss chard and kale. Cook for 2-3 minutes until wilted.

  4. Add chicken broth, lemon juice, and red pepper flakes to the skillet. Cook for an additional 2-3 minutes until the greens are tender.

  5. Serve the garlicky lamb cutlets on a platter with the Sicilian-style greens. Enjoy!
