How To Make Creamy Cod Chowder Stew

Ingredients
- 1 lb cod fillets, cut into chunks
- 4 slices bacon, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

Add the onion, garlic, carrots, and celery to the pot and cook until softened.

Add the potatoes, chicken broth, bay leaf, and dried thyme to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.

Add the cod fillets to the pot and simmer for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.

Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 5 minutes to heat through.

Remove the bay leaf and ladle the stew into bowls. Garnish with the reserved crispy bacon and chopped fresh parsley.
