Ingredients

  • 8 ounces of asparagus, trimmed and cut into bite-sized pieces
  • 8 ounces of pasta
  • 1/2 cup of fresh mint leaves
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of pine nuts
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 1/3 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a blender or food processor, combine the mint leaves, Parmesan cheese, pine nuts, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.

  3. In a large skillet, heat some olive oil over medium heat. Add the asparagus and sauté for 5-7 minutes, until tender-crisp.

  4. Add the cooked pasta to the skillet and toss with the asparagus.

  5. Pour the mint pesto over the pasta and toss until well coated.

  6. Serve hot and enjoy!
