Ingredients

  • 1 pound of salmon fillets
  • 2 tablespoons of kosher salt
  • 1 tablespoon of brown sugar
  • 1 tablespoon of lemon zest
  • 4 small latkes
  • 1/4 cup of sour cream
  • Fresh dill for garnish

Instructions

  1. In a small bowl, mix together the kosher salt, brown sugar, and lemon zest.

  2. Rub the salt mixture evenly over the salmon fillets, covering all sides. Place the salmon in a shallow dish and refrigerate for at least 3 hours, up to overnight.

  3. After the salmon has cured, rinse it thoroughly under cold water to remove any excess salt.

  4. Pat the salmon dry with paper towels and set aside.

  5. Preheat the oven to 350°F (175°C).

  6. Heat a large non-stick skillet over medium heat and add a small amount of oil.

  7. Fry the latkes until they are golden brown and crispy on both sides. Remove from the skillet and drain on paper towels.

  8. To assemble, place a latke onto each plate, followed by a piece of cured salmon.

  9. Top the salmon with a dollop of sour cream and garnish with fresh dill.

  10. Serve immediately and enjoy!
