Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the salad and toss until well coated.

  4. Serve immediately and enjoy!
