How To Make Loaded Turkey Chili Baked Potato

Leftovers are meant to be given a second life. For instance, we are making this cheesy loaded baked potato dish with turkey and chili.

Preparation: 5 minutes
Cooking: 10 minutes
Total: 15 minutes

Serves:

Ingredients

  • 22ozrusset potato
  • 1cupkid-friendly turkey chili
  • 1cupcheddarreduced fat shredded
  • 1tbspchiveschopped, or scallions
  • reduced fat sour cream

Instructions

  1. Poke holes in the potato with a fork, then cook in the microwave for about 4 to 8 minutes until potatoes are soft and cooked through. Or bake at 400 degrees F.

  2. Split the potato in half lengthwise down the middle and remove the top of each potato.

  3. Top with shredded cheese, turkey chili, and chives.

  4. Enjoy!
