Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup peas
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Place the lamb, carrots, potatoes, onion, garlic, and peas into the slow cooker.

In a small bowl, whisk together the beef broth, tomato paste, rosemary, thyme, salt, and pepper. Pour over the lamb and vegetables.

Set the slow cooker to low and cook for 6 hours, or until the lamb is tender.

Once cooked, taste and adjust seasoning if needed. Serve hot.
