Serves:

Ingredients

  • 3 cups rolled oats
  • 1 cup nuts, chopped (such as almonds, pecans, or walnuts)
  • 1/2 cup seeds (such as pumpkin or sunflower seeds)
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (such as raisins, cranberries, or apricots)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the rolled oats, nuts, seeds, honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt until well combined.

  3. Spread the mixture evenly onto the prepared baking sheet.

  4. Bake for 20-25 minutes, or until golden brown, stirring halfway through to ensure even baking.

  5. Remove from the oven and let the granola cool completely on the baking sheet. It will become crunchier as it cools.

  6. Once cooled, stir in the dried fruit.

  7. Store the homemade granola in an airtight container at room temperature for up to 2 weeks.
