Ingredients

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 cups water
  • 4 bay leaves
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium-high heat. Add beef and brown on all sides.

  2. Add onions and garlic, stirring until softened.

  3. Pour in beef broth and water, add bay leaves. Bring to a boil, then reduce heat and let simmer for 1 1/2 hours.

  4. Add carrots and potatoes, and continue simmering for another 30 minutes or until vegetables are tender.

  5. Season with salt and pepper.

  6. Discard bay leaves before serving.
