How To Make Bison Stew

Ingredients

  • 1 lb bison stew meat
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 2 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the bison stew meat and cook until browned on all sides.

  2. Add the garlic, onion, carrots, celery, and potatoes to the pot and cook for 5-7 minutes, until the vegetables start to soften.

  3. Add the beef broth, salt, pepper, tomato paste, thyme, and bay leaf to the pot. Bring to a boil, then reduce heat to low and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender and the vegetables are cooked through.

  4. Serve hot with crusty bread or over rice.
