Ingredients

  • 2 cans of sardines in tomato sauce
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 potatoes, peeled and diced
  • 1 bell pepper, chopped
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 cups of chicken or vegetable stock
  • Salt and pepper, to taste
  • 2 tbsp of olive oil

Instructions

  1. In a large pot, heat up the olive oil over medium heat.

  2. Add the onion and garlic and cook for a few minutes until softened.

  3. Add the potatoes and bell pepper and cook for a few more minutes.

  4. Add the paprika, thyme, salt, and pepper and stir to combine.

  5. Pour in the stock and add the bay leaf.

  6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes or until the potatoes are tender.

  7. Add the sardines with the tomato sauce and simmer for another 5 minutes.

  8. Remove the bay leaf and serve hot with some crusty bread.
