Ingredients

  • 1 can white beans, drained and rinsed
  • 1 cup chard, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • Marinara sauce for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, mash the white beans with a fork or potato masher until well mashed.

  3. Add the chard, breadcrumbs, Parmesan cheese, parsley, basil, garlic, egg, salt, and pepper to the mashed beans. Mix well until combined.

  4. Shape the mixture into golf ball-sized meatballs and place them on a greased baking sheet.

  5. Bake in the preheated oven for 25 minutes, or until the meatballs are golden brown and cooked through.

  6. Serve the meatballs with marinara sauce and enjoy!
