How To Make Mushroom and Swiss Chard Quiche
A savory quiche filled with earthy mushrooms and nutritious Swiss chard.

Ingredients
- 1 refrigerated pie crust
- 1 tbsp olive oil
- 1 shallot, diced
- 2 cups sliced mushrooms
- 3 cups packed Swiss chard, trimmed and chopped
- 4 eggs
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded Swiss cheese
Instructions

Preheat oven to 375°F.

Unroll pie crust and fit into a 9-inch pie dish. Trim and crimp edges as desired.

Heat olive oil in a large skillet over medium heat. Add shallot and cook until softened, 2-3 minutes.

Add mushrooms to skillet and cook until softened and browned, about 5 minutes.

Add Swiss chard to skillet and cook until wilted, about 2 minutes.

In a separate bowl, whisk together eggs, milk, salt, and black pepper. Stir in cooked mushroom and Swiss chard mixture.

Pour mixture into pie crust and top with shredded Swiss cheese.

Bake for 35-40 minutes, or until quiche is set and golden brown.

Let quiche cool for a few minutes before slicing and serving.
