How To Make Goat’s Cheese, Tomato & Olive Triangles

Ingredients
- 4 sheets of filo pastry
- 100g goat’s cheese, crumbled
- 1 tomato, diced
- 1/4 cup kalamata olives, pitted and chopped
- 2 tbsp fresh basil, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F).

Lay one sheet of filo pastry on a clean surface and brush with olive oil. Repeat with the remaining sheets of filo pastry.

In a bowl, mix together the goat’s cheese, diced tomato, chopped olives, and fresh basil. Season with salt and pepper to taste.

Spoon a portion of the goat’s cheese mixture onto the bottom corner of each filo pastry sheet.

Fold the bottom corner of the filo pastry over the goat’s cheese mixture, creating a triangle shape. Continue folding the pastry in a triangle shape until the entire sheet is folded.

Place the triangles onto a baking tray lined with parchment paper.

Brush the triangles with olive oil and sprinkle with salt and pepper.

Bake in the preheated oven for 15 minutes or until the pastry is golden and crispy.

Serve the goat’s cheese, tomato & olive triangles warm.
