How To Make Chocolate, Coconut & Cardamom Fridge Mousse Cake

Ingredients
- 200g dark chocolate, chopped
- 400ml coconut milk
- 1 tsp ground cardamom
- 4 tbsp honey
- 1 tsp vanilla extract
- 200ml heavy cream
- 1/2 cup desiccated coconut
- 1/4 cup toasted almonds, chopped
- Fresh raspberries, for garnish
Instructions

In a heatproof bowl, combine the dark chocolate, coconut milk, cardamom, honey, and vanilla extract. Place the bowl over a pot of simmering water and stir until the chocolate is melted and the mixture is smooth.

Remove the bowl from the heat and let it cool to room temperature.

In a separate bowl, whip the heavy cream until soft peaks form.

Gently fold the whipped cream into the chocolate mixture until well combined.

Add the desiccated coconut and toasted almonds, and fold until evenly distributed.

Pour the mixture into a lightly greased 8-inch cake pan and smooth the top with a spatula.

Cover the cake pan with plastic wrap and refrigerate for at least 4 hours, or until set.

Once set, remove the cake from the fridge and run a knife along the edges to loosen it. Carefully invert the cake onto a serving plate.

Garnish with fresh raspberries and serve chilled.
