Ingredients

  • 2 chicken breasts, cooked and shredded
  • 2 carrots, julienned
  • 2 avocados, sliced
  • 4 large lettuce leaves
  • 4 whole wheat tortillas
  • 4 tablespoons of Greek yogurt
  • Salt and pepper, to taste

Instructions

  1. Lay out the tortillas and spread one tablespoon of Greek yogurt on each.

  2. Place a lettuce leaf on top of the yogurt.

  3. Divide the shredded chicken, julienned carrots, and avocado slices evenly among the tortillas.

  4. Sprinkle with salt and pepper to taste.

  5. Roll up the tortillas tightly and secure with toothpicks if needed.

  6. Slice each roll into bite-sized pieces.
