Ingredients
- 4 large whole wheat tortilla wraps
- 1 can of chickpeas, drained and rinsed
- 1 cup of cooked quinoa
- 1 large cucumber, diced
- 2 large tomatoes, diced
- 1 red onion, sliced thinly
- 1/4 cup of chopped kalamata olives
- 1/4 cup of crumbled feta cheese
- 1/4 cup of chopped fresh parsley
- 1 tbsp of olive oil
- Salt and pepper to taste
Instructions

In a large mixing bowl, combine the chickpeas, quinoa, cucumber, tomatoes, red onion, olives, feta cheese, parsley, olive oil, and salt and pepper to taste.

Heat the tortilla wraps in the microwave for about 10 seconds.

Divide the veggie mixture evenly among the four tortilla wraps, placing the mixture in a horizontal line at the center of each wrap.

Roll the wraps tightly, tucking in the sides as you go.

Slice the wraps in half and serve.
