Ingredients

  • 1 large zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • Salt and black pepper, to taste
  • 10 oz whole wheat pasta
  • 1/4 cup grated parmesan cheese
  • 2 tbsp fresh basil leaves

Instructions

  1. Preheat the oven to 400°F.

  2. In a baking dish, mix the sliced zucchini, red bell pepper, yellow onion, and cherry tomatoes with olive oil, salt, and black pepper. Roast for 20-25 minutes until the vegetables are tender and slightly browned.

  3. While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

  4. In a large mixing bowl, combine the pasta with the roasted vegetables. Toss to coat evenly.

  5. Serve hot and sprinkle with grated parmesan cheese and fresh basil leaves.
