This is a low-carb stir-fry dish made with cabbage and other healthy vegetables.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1/2 head of cabbage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tbsp soy sauce
  • 1 tsp ginger powder
  • salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the onion and garlic and cook until softened, about 2 minutes.

  3. Add the sliced cabbage, peppers, and zucchini to the skillet and stir to combine.

  4. Add the soy sauce and ginger powder and stir again.

  5. Cook the vegetables for 5-7 minutes or until they are tender but still crisp.

  6. Season the dish with salt and pepper to taste.

  7. Serve the stir-fry hot and enjoy!
