Ingredients

  • 1 large red bell pepper, sliced
  • 1 large yellow squash, sliced
  • 1 large zucchini, sliced
  • 1 small eggplant, sliced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 4 ciabatta rolls
  • 4 oz goat cheese
  • 1 cup baby spinach

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. In a large bowl, toss sliced vegetables with olive oil, salt, and pepper.

  3. Grill vegetables until tender and slightly charred, about 10-12 minutes.

  4. Cut ciabatta rolls in half and spread goat cheese over the bottom half.

  5. Top with grilled vegetables and baby spinach.

  6. Place the top half of the ciabatta roll on the sandwich.

  7. Grill the sandwich until the bread is toasted and the cheese is melted, about 5 minutes.

  8. Serve and enjoy!
