How To Make Vegetarian Grilled Vegetable Sandwich Recipe
A delicious grilled sandwich filled with flavorful veggies, perfect for a vegetarian meal.

Ingredients
- 1 large red bell pepper, sliced
- 1 large yellow squash, sliced
- 1 large zucchini, sliced
- 1 small eggplant, sliced
- 1/4 cup olive oil
- Salt and pepper to taste
- 4 ciabatta rolls
- 4 oz goat cheese
- 1 cup baby spinach
Instructions
- 
Preheat grill or grill pan to medium-high heat. 
- 
In a large bowl, toss sliced vegetables with olive oil, salt, and pepper. 
- 
Grill vegetables until tender and slightly charred, about 10-12 minutes. 
- 
Cut ciabatta rolls in half and spread goat cheese over the bottom half. 
- 
Top with grilled vegetables and baby spinach. 
- 
Place the top half of the ciabatta roll on the sandwich. 
- 
Grill the sandwich until the bread is toasted and the cheese is melted, about 5 minutes. 
-
