Grilled zucchini rolls stuffed with ricotta cheese, spinach, and sun-dried tomatoes, a perfect appetizer or side dish.

Ingredients
- 2 large zucchinis, sliced lengthwise
- 1 cup of ricotta cheese
- 1/2 cup of chopped spinach
- 1/4 cup of chopped sun-dried tomatoes
- 1 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat grill or grill pan to high heat.

Brush zucchini slices with olive oil and sprinkle with salt and pepper.

Grill zucchini slices for 1-2 minutes on each side until grill marks form.

In a small bowl, mix together ricotta cheese, spinach, and sun-dried tomatoes.

Spread a spoonful of the cheese mixture onto each zucchini slice and roll up tightly.

Secure each roll with a toothpick if needed.

Grill the zucchini rolls for another 2-3 minutes on each side until cheese is melted and zucchini is tender.
