  • 1 lb breakfast sausage
  • 2 zucchinis, grated
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • Salt and pepper
  • Olive oil

Instructions

  1. In a large bowl, combine the breakfast sausage and grated zucchini.
  2. Add the flour, eggs, milk, salt, and pepper, and mix until well combined.
  3. Heat a large skillet over medium heat, and add enough olive oil to cover the bottom.
  4. Using a large spoon, drop the fritter batter into the skillet and flatten with a spatula.
  5. Cook for 3-4 minutes on each side, until golden brown.
  6. Serve hot, preferably with a dollop of sour cream or salsa on top.
