  • 200g feta cheese, crumbled
  • 2 medium-sized beetroot, cooked and diced
  • 1 small pomegranate, seeds removed
  • 100g mixed salad greens
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the feta cheese, beetroot, pomegranate seeds, and salad greens.

  2. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.
