How To Make Parmesan Zucchini Fritters
These crisp and golden zucchini fritters are made with shredded zucchini, onions, and Parmesan then served with a bowl of marinara sauce.

Ingredients
- 1lbzucchini,(about 2 large)
- ½onion,finely chopped
- 3large eggs,beaten
- ½tspgarlic powder
- kosher salt
- freshly ground black pepper
- ½cupParmesan,freshly grated
- ¾cupall-purpose flour
- 1½tbspextra-virgin olive oil
- ½cupmarinara
- 1tbspbasil,fresh thinly sliced
- 1clovegarlic,minced
- 1tspred pepper flakes,crushed
Instructions

On the large holes of a box grater, grate zucchini. Using a cheesecloth or clean dish towel, squeeze out as much liquid as possible.

In a large bowl, combine shredded zucchini with onion, eggs, and garlic powder. Season with salt and pepper and stir to combine. Mix in Parmesan and flour and stir until fully incorporated.

In a large skillet over medium-high heat, heat olive oil. For each fritter, scoop ¼ cup batter into skillet and cook for 2 minutes per side until golden.

In a small bowl, combine marinara with basil, garlic, and red pepper flakes.

Serve fritters with sauce.
