How To Make Jerk Sweet Potato & Black Bean Curry

Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can black beans, rinsed and drained
- 1 can coconut milk
- 2 tbsp jerk seasoning
- 1 tsp turmeric
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro, for garnish
Instructions

In a large pot, heat vegetable oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.

Add sweet potatoes and cook for another 5 minutes.

Add black beans, coconut milk, jerk seasoning, turmeric, cumin, salt, and pepper. Stir well to combine.

Bring the curry to a simmer, then reduce the heat and cover the pot. Cook for about 25-30 minutes, or until the sweet potatoes are tender.

Serve hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
