How To Make Spicy Peanut Chicken Stew

A flavorful and hearty chicken stew with a spicy peanut sauce, perfect for a chilly evening.

Ingredients

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup of chicken broth
  • 1 can (400g) of diced tomatoes
  • 1/2 cup of creamy peanut butter
  • 2 tablespoons of soy sauce
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of cayenne pepper (adjust according to spice preference)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.

  2. In the same pot, add the chopped onion, minced garlic, and sliced red bell pepper. Cook until the vegetables are softened, about 5 minutes.

  3. Return the chicken to the pot and add the diced tomatoes, chicken broth, peanut butter, soy sauce, chili powder, cumin, and cayenne pepper. Stir well to combine.

  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.

  5. Season with salt and pepper to taste. Serve the spicy peanut chicken stew hot, garnished with fresh cilantro. Enjoy!
