How To Make Lentil Salad with Tahini Dressing

Ingredients
- 1 cup dried lentils
- 2 cups water
- 1/4 cup red onion, finely diced
- 1/4 cup cucumber, finely diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons tahini
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions

Rinse the lentils under cold water, then place them in a pot with the water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water and let cool.

In a large bowl, combine the cooked lentils, red onion, cucumber, cherry tomatoes, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, tahini, garlic, salt, and pepper until well combined. Adjust the seasoning to taste.

Pour the tahini dressing over the lentil mixture and toss to coat evenly.
