Ingredients

  • 12 large scallops
  • 8 strips of bacon, cooked and crumbled
  • 6 cups of mixed salad greens
  • 1/4 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Season the scallops with salt and pepper. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Cook the scallops for 2-3 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

  2. In a large bowl, toss together the salad greens, cherry tomatoes, red onion, and crumbled bacon.

  3. In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Season with salt and pepper to taste.

  4. Pour the dressing over the salad and toss until all the ingredients are evenly coated.

  5. Divide the salad among 4 plates and top each with 3 scallops. Sprinkle with crumbled feta cheese.

  6. Serve the warm salad immediately and enjoy!
