How To Make Brazilian Carrot Cake

Ingredients
- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 3 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions

Preheat the oven to 350°F (180°C) and grease a round cake pan.

In a bowl, whisk together the eggs, sugar, and vegetable oil until well combined.

Add the grated carrots and mix well.

In a separate bowl, combine the flour, baking powder, baking soda, and salt.

Gradually add the dry mixture to the wet mixture, stirring until just combined.

Stir in the vanilla extract and chopped walnuts (if using).

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Once the cake is cooled, prepare the chocolate ganache by melting 1 cup of chocolate chips with 1/2 cup of heavy cream in the microwave or on a stovetop.

Pour the ganache over the cake, allowing it to drip down the sides.
