How To Make Chunky Fish Chowder

Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and diced
  • 2 cups fish or vegetable broth
  • 1 cup milk or cream
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add carrots, celery, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.

  3. Pour in the fish or vegetable broth and add the bay leaf and dried thyme. Bring to a boil, then reduce heat and simmer for 10 minutes.

  4. Add the fish chunks to the pot and gently stir. Cook for an additional 5 minutes or until fish is cooked through and flakes easily.

  5. Stir in the milk or cream and season with salt and pepper to taste. Cook for another 5 minutes.

  6. Remove the bay leaf from the pot. Serve hot, garnished with fresh parsley.
