How To Make Fragrant Fish Tagine

Ingredients
- 1.5 lbs white fish fillets (such as cod or halibut), cut into chunks
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper (optional, for heat)
- 1 cup cherry tomatoes, halved
- 1 preserved lemon, sliced (optional, for tanginess)
- 1/4 cup green olives, pitted and sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a large tagine or skillet, heat the olive oil over medium heat. Add the sliced onion and garlic, and cook until softened and fragrant.

Add the ground cumin, coriander, paprika, turmeric, cinnamon, and cayenne pepper to the pan. Stir well to coat the onions and garlic with the spices.

Add the fish chunks to the pan, and gently stir to coat them with the spice mixture. Cook for a few minutes, until the fish starts to turn opaque.

Add the cherry tomatoes, preserved lemon slices (if using), and green olives to the pan. Stir gently to distribute the ingredients evenly.

Reduce the heat to low, cover the tagine or skillet, and simmer for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

Remove the tagine or skillet from the heat, and sprinkle the chopped cilantro and parsley over the top. Season with salt and pepper to taste.

Serve the fragrant fish tagine hot, with couscous or crusty bread on the side.
