How To Make Chard, Sweet Potato & Peanut Stew

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 sweet potatoes, peeled and diced
- 1 bunch chard, stems removed and leaves chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1/2 cup peanut butter
- 1 tsp cumin
- Salt and pepper to taste
- Chopped peanuts, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until fragrant.

Add the sweet potatoes and cook for 5 minutes, stirring occasionally.

Stir in the chard and cook until wilted.

Add the diced tomatoes, vegetable broth, peanut butter, cumin, salt, and pepper. Stir well.

Bring the stew to a boil, then reduce heat and let it simmer for 30 minutes, or until sweet potatoes are tender.

Serve the stew hot, garnished with chopped peanuts.
