Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 sweet potatoes, peeled and diced
  • 1 bunch chard, stems removed and leaves chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup peanut butter
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped peanuts, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until fragrant.

  2. Add the sweet potatoes and cook for 5 minutes, stirring occasionally.

  3. Stir in the chard and cook until wilted.

  4. Add the diced tomatoes, vegetable broth, peanut butter, cumin, salt, and pepper. Stir well.

  5. Bring the stew to a boil, then reduce heat and let it simmer for 30 minutes, or until sweet potatoes are tender.

  6. Serve the stew hot, garnished with chopped peanuts.
