How To Make Chocolate Mint Loaf Cake

- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp peppermint extract
- 3/4 cup buttermilk
- 1/2 cup mini chocolate chips
Instructions

Preheat oven to 350°F (175°C). Grease and flour a loaf pan.

In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in peppermint extract.

Gradually add flour mixture to the butter mixture, alternating with buttermilk, beginning and ending with flour mixture. Mix until just combined. Fold in chocolate chips.

Pour batter into prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
